Their story
A three-person roastery in Rotterdam Noord that buys almost exclusively from producers experimenting with fermentation. They will happily talk for an hour about the difference eighteen hours of anaerobic rest makes, and their coffees justify it.
The name comes from the old harbour crane at the end of the street, and the shelf behind the counter is a library of sample bags from lots they did not buy. They keep them to remember what they learned. Every bag gives the fermentation time, in hours, on the front.
